Garden Fresh Salsa

I love our CSA box! One of the challenges that comes with it is finding creative ways to use the veggies that come in the box each week. This week was easy! Tomatoes, garlic, peppers, onions. Garden Fresh Salsa, quickly, came to mind.

This recipe will come together in a hurry for you, too! It takes about 5-7 minutes to peel the onions and garlic and throw the ingredients in the food process.

Garden Fresh Salsa

1 and 1/2- 2 cups Tomatoes (I used yellow and red)

3-4 cloves of Garlic

1/2 cup chopped Cilantro

2 Jalapenos (remove seeds for less heat)

1 small Yellow Onion or a 1/2 of a large Onion

2 tsp Cumin

1 tsp Sea Salt

Juice of 2 Limes

Salsa Ingredients

Salsa Ingredients

Peel onions and garlic. Cut Jalapenos in half and remove seeds, if you do not want the heat.  Squeeze juice of two limes. Add all ingredients to food processor. Blend until salsa is desired consistency.

Toss ingredients in the food processor and blend.

Serve salsa as a appetizer with chips or slices of cucumber or as a finishing touch to tacos, lettuce wraps, chicken or fish.
